My favorite breakfast bars ever. They’re the perfect combination of banana bread/oatmeal in bar form. These make a great mid-week on-the-go breakfast or snack that the whole family is guaranteed to love! The sweetness comes from bananas, no added sugars are used in this recipe (aside from the optional white chocolate drizzle)! They are nutritious and delicious.

Ingredients:
•2 overripe mashed bananas
•1 cup + 1/4 cup rolled oats
•1 cup whole wheat flour
•1/2 cup + 1 tbsp almond butter
•1/2 tsp cinnamon
•1 tsp vanilla extract
•1 tsp baking powder
•1/2 cup of blueberries
•2 tbsp white chocolate chips (for drizzle)
•2-4 tbsp water*
Instructions:
•Preheat oven to 350F.
•Coat 9×7 baking dish generously with cooking spray.
•Mash bananas and put in large bowl.
•Add oats, flour, cinnamon, vanilla extract and baking powder. Mix until well combined (add water if necessary). Batter will be very thick.
•Add in blueberries and mix very carefully.
•Using a spoon, scoop batter into dish, spread evenly throughout dish.
•Bake for 21-24 minutes or until cooked through.
•Let cool, cut bars into 6 slices.
•Melt 2 tbsp of white chocolate chips and drizzle over bars-enjoy!
Notes:
*If mix is dry, add 2-4 tbsp of water (add 1 tbsp at a time, add more if needed)
