Pasta with Eggplant, Kale, Feta and Toasted Pine Nuts

The simple (but delicious!) pasta dish you didn’t know you needed! Made with fresh pasta, feta, toasted pine nuts and kale, this super flavorful pasta is a crowd pleaser and so easy to make!

You need (serves ~3):

•Fresh pasta (or boxed)

•1 large eggplant (cut into squares)

•Kale-or spinach (1 box/bag-it shrinks!)

•2 garlic cloves (minced)

•Toasted pine nuts

•Feta cheese

•Olive oil

•Salt & pepper to taste

Instructions:

•Boil large pot of salted water for pasta.

•Bake eggplant at 350F. If using air fryer, spray a little cooking spray into bin before putting eggplant in. Shake every few minutes. If baking in oven, bake for 20-25 mins stirring every 5 mins.

•While eggplant is cooking, in a sautée pan, add cooking spray and minced garlic, then add kale. Stir frequently.

•In a separate pan, add pine nuts (no oil/cooking spray needed). Stir constantly. Take off of stove top as soon as pine nuts begin to brown.

•Follow instructions on the packaging for pasta.

•Once pasta is cooked and drained, pour pasta back into pot. On low heat, add the kale, eggplant and 1-2 tbsp olive oil. Add salt and pepper to taste.

•Plate pasta, sprinkle feta and pine nuts-enjoy!
